off the menu: chicken in a blanket

When I came back to town on Monday, we had no food. There were condiments in my refrigerator and that was it. The grocery store is overwhelming when you find yourself with empty kitchen. And a list is essentially pointless. I just shove random things into the cart with my milk, bread, and eggs.

One thing that I perhaps didn’t need but grabbed anyway was a pack of mini chicken apple sausages for the kids. I am a sucker for small things. I don’t know how it happened or when it started, but ever since my husband pointed it out, I have to acknowledge (with annoyance) that it is true.

So I bought these little chicken sausages for no reason. And then I remembered that I used to love pigs in a blanket as a kid. My parents would make them with canned Vienna sausages. If you knew my mom, you couldn’t imagine that she used to serve me Vienna sausages. Do they even sell those anymore? I tell you, the culinary treats that are the norm in south Louisiana would blow your mind. Unless you are from there, then by all means, get an extra can of Ancel and some Trappey’s black-eyed peas when you go to Rouse’s and send them over.

I went back to the store a bit later and bought a can of buttermilk biscuits. Don’t even look at the ingredients, people. And, Jenner? I don’t want to hear about it. This morning, I popped those babies open and rolled them flat. Next came a little chicken sausage and I rolled them up.

Follow the directions on your biscuit can for baking, then put them in a lunch box with alphabet noodles, fruit, and s’mores fixins. Add some carrots and peanut butter too (I did, you just can’t see them because they are in the other section of the lunch box).

Mother of the year, I tell you. I’m not sure how the nominating committee missed me for 2013, but I am building up for 2014. Don’t forget to cast your vote after you make chicken in a blanket.
