off the menu: hidden veggies

Leftover pumpkin from making these scones? Pumpkin zucchini muffins to the rescue. Moist, flavorful and chock full of veggies.

Break out the Cuisinart to shred the zucchini.

We skipped the walnuts, but those sound pretty good. We also baked as muffins instead of loaves. Pulled ours out at about 22 minutes.

Stick these babies in the freezer for lunch box or snack. Love sneaky vegetables.
