off the menu: homemade pizza rolls

I don’t think that I have said how grateful we are to have help at home. A full description of why I am specifically so grateful for Lacie, our Girl Friday, will be forthcoming when I am not lying on the couch watching seven episodes in a row of “Love It or List It” on HGTV. Trust me when I say that I’m not sure how this house would function without Lacie. And I think I should call HGTV to see what “Love It or List It” can do for me.

One of the jobs that Lacie is tasked with (happily for me, maybe not so happily for her) is making sure that our snack bins are stocked. When she first started working with us, I don't think she would mind me saying that she did not know the first thing about cooking. The twins were one at the time, so cooking was really not too involved. But she took on making soups and stews and the twins ate good, healthy food. She has become quite a cook over the past 2 ½ years. In this round of snack bin refills, she made pizza rolls from Kevin Gillespie’s Fire In My Belly (page 263). They are delicious. The whole wonton wrapper for pizza threw me a little at first but the filling is outstanding. Mushrooms, green peppers, sausage, pepperoni... I don't even like mushrooms and I thought these were tasty. The wonton is actually great because it makes for a much less bready (is that a word?) snack and doesn't take away from the filling.

I can’t say these are healthy. In fact, I’m pretty sure they are not. They sure do beat the alternative in the freezer section, though. And they are fantastic for teenagers to pop in their lunch sack.
