the menu: the week of november 2

If I had a dollar for all the times I had to apologize on this blog for being off the radar for a multitude of days (or in this case, over a week!), I’d be rich. It’s really too bad that bloggers get paid for actually posting things. It’s also a good thing that I’m not doing this for the money or you would be seeing nothing but ramen on the menu.  

My husband is about to start his third week of travel in a row. He’s been to Texas, Los Angeles, and New York already, next week will be Los Angeles again and San Francisco. Just racking up those miles for that mystical Hawaiian vacation. In addition, hockey season has officially started, which means for the next 19 weekends, we will have kids on the road. Meanwhile, if I’m honest, I feel absolutely no compulsion to cook. How do you kids feel about cereal or waffles for dinner? Pretty good, I’ll bet.

It’s time to get back into the groove even though it is just the three of us again this week. To get motivated, I began a clean out of my recipe pin boards last week. I was shocked at how many vegetarian recipes I have collected but not tried. We will be rectifying that next week when all of the kids are back home. For this week, though, we’ll try a few new things and a few simple things. Ready?

Monday. Chicken Tagine 

Tuesday. Pork and Squash Enchiladas

Wednesday. Green Bean and Turkey Rice Bowl 

Thursday. Sweet Balsamic Chicken with Warm Broccoli and Barley Pilaf 

Friday. Cod with Tomatoes, Olives, and Marjoram
