the menu: week of december 7

Whoa! How did it get to be Monday already? Three days late on the old menu post and I totally blame it on the hockey. It may have also been the baking. To make it up to you, I will try to post a review of last night’s amazing Chicken (and zucchini for our resident vegetarian) Parmesan. So delicious. And so little parmesan, which I find rather odd. Perhaps this is because it was “Italian” food via a Cajun cookbook? Keep a look out for that one. I also owe you one about our post-Thanksgiving gumbo. Yep. It’s good.

This week is not a whole lot better than last weekend in terms of personal time. We’ve got so much going on as a family that it would make your head spin. Simple meals this week, people.

Monday. Salad with Grilled Chicken and Cilantro Lime Dressing

Tuesday.  French Toast Skewers with Sausage (it’s Christmas Movie in Pajamas night! We had to move things around, of course.) Also, this french toast casserole looks pretty awesome.

Wednesday. Drip Beef Sandwiches (We do our own thing here in the crock pot with veggies and magic seasoning called beefer upper that I stock up on when I’m in Louisiana, but you should try this nice looking recipe for drip beef.)

Thursday. Dinner? Did someone say I have to make dinner too? Leftovers, people.

Friday. Crockpot Butter Chicken

Ready to start the week? Have a good one. Enjoy the little things. Eat a candy cane. Take a break from your list. Here we go…
