the review: flank steak tacos
I don’t know why I continue to plan meals for the day prior to going out of town. I never actually have the time to cook on those days. I do hope you enjoyed the seared scallops with greens and orzo, because I didn’t get to make it and you will be seeing it again on another menu. I did, however, enjoy chili and grilled cheese at our local pub. Especially the part where I didn't have to clean the kitchen.
I did make the flank steak tacos earlier in the week. Can I be honest? That was rhetorical. You know must know by now that a Mac truck couldn’t stop me from giving my opinion. The tacos were just ok. It is highly possible that this is because I skipped the fries and making my own pico de gallo. Truly, if you have looked at the photos from the original blog, you know that those fries looked amazing. I just couldn’t bring myself to put fries on a taco. I was having a rare moment of let’s not serve extra calories and fat that we don’t need. She said while eating an entire king cake with her coffee for breakfast.
I don’t think the fries were the only problem. While the meat was definitely tender, it didn’t have enough flavor for my taste. I think leaving the seeds in the jalapeño and adding more beer (and salt and pepper) might have helped. On the plus side, this was incredibly easy to prepare. I had it made in about 20 minutes, then let the crock pot do the work for six hours. I happen to live in an area with a pretty large Mexican population, so I had no problem subbing homemade pico de gallo for grocery-made pico de gallo and I had some pretty delicious tortillas. But even the kids weren’t on board with this one. We have a LOT leftover. Guess what, kids? We’ll be having this for leftovers next time everyone is home! I’ll let you know how it freezes.
