the review: penne with roasted cauliflower
I’m not going to lie. I needed an easy dinner last night. I am packing up half of my house to prepare for vacation while also packing up the entire kitchen to prepare for our kitchen refresh. We leave in two days. Work starts Monday. Cooking dinner? Really?
This dinner – penne with roasted cauliflower and lemon caper dressing – was perfectly simple and tasty. Boil pasta. Check. Roast cauliflower with onions and garlic. Add tomatoes. Check. Make dressing. Check. Toss it all together. Done and done. This is a flavorful dish that can be made in about 40 minutes, including unattended cooking time. Busy week night? Try this. Maybe throw some beans into it. Or serve it with a nice spinach and edamame. I didn’t think my kids would eat something with tomatoes and capers, but they loved it. I hope yours do too.
