the menu: week of august 3
Back to reality. We’ve had a pretty good week without getting too excited in the kitchen. After several days of not really cooking, Gus decided that we needed to have chicken pot pies for dinner last night. Yep. He helped with the vegetables and covered the pies with crust. Not surprisingly, the kids are more vegetables in one sitting last night than they have all week because they “made” dinner. Must remember to schedule one night per week as kids’ choice.
There’s quite a bit going on in our neck of the woods during August. This is one of my favorite times of the year here because for two weeks, we have outdoor symphony concerts almost every night. The free concerts are perfect for families or date night (there is a booth with kinder music for kids). They are relatively short, early in the evening, and picnics are welcome. We will be picnicking quite a bit over the next couple of weeks starting on Monday.
Sunday. Shrimp and Fresh Corn Grits. (Bon Appétit, July 2014)
Monday. Picnic at the Symphony (various cheeses, salami, fruit, breads, and salads)
Tuesday. Honey-Ginger Chicken with Lime. (Food and Wine, July 2014)
Wednesday. Pasta with Freezer Sauce, Sausage, and Peppers
Thursday. Chickpea, Barley, and Feta Salad. (Bon Appétit, July 2014)
Friday. Mint and Cumin Spiced Lamb Chops. (Bon Appétit, July 2014)
Saturday. Brats and Salad. (Family day at the symphony!)
Have a great weekend.
