I hope you will bear with me while I slowly try to get back on the horse. We've had some family schedule changes and the start of school for everyone which has just made it slightly more difficult to be a planner. You know I like to force a square peg into a round whole as much as the next gal, but even I give up from time to time. Anyway, for now, I'll be posting our menu plan for Monday through Friday only and I'm not going to be making that handy dandy pinnable menu because nobody pins it anyway. I will continue to pin what we are eating here. Shall we see how that works? Fantasitc.

An update on our eaters: our vegetarian is still plugging along, but is no longer gluten free, which is a bonus. We've got two teen boys playing hockey and football, respectively, and who can literally eat seven eggs each for breakfast. They want protein all the time. Hmmmm. How to balance everyone's food needs without becoming a short-order cook? If you have a solution, I am all ears. For now, we are easing in slowly. Two of the teens will be backpacking for the next week, then all four will be gone for two days on a school trip. My husband will also be traveling next week. It’s like a revolving door around here.

Tuesday. Soup au Pistou and Grilled Cheese

Wednesday. Vegetable Stir-fry and Shrimp and Corn Dumplings 

Thursday. Pizza with Baked Meatballs 

Friday. Slow Cooker Coconut Ginger Chicken
