let’s talk about fish tacos

Ever since my kids saw the Lego Movie (we could discuss this for days, people), they think Taco Tuesday is all that and a bag of chips. And ever since I saw these ridiculously cute Oreo tacos on Pinterest, I agree. I mean, are you kidding me with these?

Obviously, we had to have tacos last Tuesday just so that we could make Oreo tacos for dessert.

I had picked up the March issue of Sunset Magazine at the grocery store the week before because the cover story was about road trip food. And we are going on a road trip. How did those people at Sunset know? The cover photograph for this perfectly timed article was of fish tacos. Not just any fish tacos. Grilled fish tacos with chile-lime slaw and avocado-tomatillo salsa. Yum.

I’ll admit to skipping the salsa. I’m sorry, but there it is. The slaw was simple and well worth making in advance. I loved how the flavors of the lime and jalapeño added to the fish in the tortilla. The fish itself was also pretty good. I might have added a bit more something. Salt? Cilantro? I’m not sure. My husband also suggested that if we mixed the olive oil in with the rub to make a paste, the fish might have had a better flavor. Either way, this was delicious and it was a very quick meal to make that will give your Taco Tuesday a bit of a kick.
