let’s talk about bob's whole grain waffles

We’ve been discussing waffles around here for five months now and you are probably thinking that the waffle is enjoying the longest 15 minutes of fame ever. If we are going to discuss food items over-staying their welcome, let’s talk about avocado toast. It’s good and all, but do I need to see six pictures a day of a piece of bread with avocado on it? Yes, yes I do spend too much time on the Internet.

While looking for soba noodles in the grocery store the other day, I stumbled on Bob’s Red Mill 10 grain pancake and waffle mix. On clearance. (Note to self: the clearance price at my local grocer was the same price as listed on Bob's website. Ugh.) I checked the expiration date then decided to give it a whirl. I’m all for simplifying.

Bob’s mix contains 10 different flours plus powdered buttermilk and leavening. That’s it. Add eggs, oil, and water to your mix for instant gratification. Ok, not instant. You still have to cook your waffles, but there is not a whole lot of measuring or egg separating or butter melting involved. Although now that I think of it, melted butter instead of oil would definitely improve these waffles. Next time.

I was very tempted to stray from the directions when I made waffles with Bob’s mix. I’m not a fan of eggy waffles (I totally just got why eggo’s are called eggo’s – not a little behind at all), and Bob called for two eggs to one cup of mix. In the interest of science, I tried to comply with instructions. I may have added just a scooch more mix in with my two eggs. I also added half of a mashed banana. I’ve learned from experience that multigrain waffles can very easily stray into the cardboard category if not properly tended. Banana seems to help. Next time, I’m adding a whole banana.

These waffles are the perfect vehicle for peanut butter or fruit or sprinkles or cinnamon sugar. My kids each ate almost two waffles at one sitting. We did not have leftovers to freeze – the batch made about five waffles – but I will try making more to freeze that next time. Verdict: if you see Bob’s mix at the grocery, go ahead and give it a try. Anything that will make your life easier is a good thing in my book. But don’t forget to add that banana. Unless you are trying to make Frisbees, then definitely skip the banana.
