the review: beef and bean chili
Just add fritos. This is some good, easy chili.
The recipe says that it feeds 6-8. There were four of us eating tonight plus two little people and we have about half a pot left. This is not because no one liked the chili. Everyone voted the recipe a keeper. One more vote in favor of the Cook's Illustrated Cookbook (page 96).
This is a very easy recipe (and a very red photo). I used my Cuisinart to chop the onions, garlic, and peppers. While the seasoning and meat were browning, I started a batch of granola. I know. Total over-achiever. Nope. Since both had to cook for an hour, which meant I wasn’t going anywhere, I figured I might as well make use of my time.
Other than substituting a can of pinto beans for one of the cans of kidney beans and using Pomi tomato sauce instead of the strained tomatoes, I followed the recipe. Oh. And I added fritos. Perfect Friday night dinner.
