let’s talk about green bean and ground turkey stir-fry

Ground turkey? I’ll be honest. I really wanted to name this dish something else, at least for purposes of this blog post, because if you are anything like me, you see ground turkey and you think bla-and. Get ready for a shocker. This green bean and ground turkey stir-fry is so good that I’ve made it twice. And it might be one of the easiest weeknight dinners that you can possibly make.

This recipe comes to us from Andi of The Weary Chef. I totally dig Andi’s style. Simple, tasty meals that anyone can cook. Don’t get me wrong. I am not afraid to put on my fancy pants apron, I just get tired of cooking (like every other normal person on the planet). And unfortunately, my kids still want to eat dinner. Every. Single. Night.

So Andi brings us this perfect weeknight meal with two key ingredients (ground turkey and green beans) and a few pantry/refrigerator staples (you all have sesame oil, ginger, green onions, rice vinegar, soy sauce, hoisin sauce, chili paste, and garlic on hand, right?). I may have gussied my turkey-green bean stir-fry up by serving it over coconut rice.  Wait. Did someone say coconut rice? Yes. Ridiculously good. My two self-proclaimed coconut haters had two servings each. And ate all of their green beans.

Get yourself some ground turkey and some green beans. Make this stir-fry. If you want to dress it up a bit, go with the coconut rice. For the record, I substituted regular water for coconut water because I am just not the type of person who has coconut water laying around. I may have also skipped adding the flaked coconut because I was distracted. No problem. The rice was still excellent.
